I could not think of a better way to celebrate National Spaghetti Day than with this photo. Yes I was a bit shocked there was a National Spaghetti day too! As I look at this picture and reminisce about my recent trip to Italy this summer, my mouth is tingling from the flavors it remembers. Fresh pasta, tomato, and the greatest pork fat of them all Guanciale.
I raised each fork full of pasta to my mouth gently and let the taste spread to every corner of my mouth enjoying and understanding Italian cooking that just can not be expressed.
I must confess though this is not Spaghetti. It is a close cousin called Bucatini, which has for the most part replaced Spaghetti in my cooking. This dish is know as Bucatini all’ Amatriciana and has been a favorite of mine since I first tried it in Eatly. Mario Batali is one of my favorite “celebrity” chefs, and I love just about everything I have tried from his restaurants, but nothing compared to the taste and simplicity of this dish I had for lunch in Rome this past summer.
